Nestled in the highlands of Ethiopia's Sidama region, the Bochesa washing station sits at an impressive elevation of 2000 to 2100 meters above sea level. This area holds special significance as the likely birthplace of the world's first coffee plants, developing a reputation for consistently excellent coffees over centuries.
Established in 2022, this young but ambitious washing station sources cherries from 823 dedicated farmers who cultivate unique Ethiopian varieties. The primary varietals—74110, 74112, and 7454—were developed by the Jimma Agricultural Research Centre for their disease resistance and higher yield potential. These varieties are prized for their balanced physical shape and delightful aroma, capable of producing excellent cup quality in both washed and natural processes.
The meticulous washed process begins with careful cherry selection, followed by pulping to separate fruit from beans. Though both processing methods are common in Sidama, the washed approach is slightly more popular, allowing the coffee's citric acidity and delicate floral notes to shine through. After 12-16 hours of controlled fermentation, the beans undergo a second washing before being dried on raised beds for 10-14 days, with regular turning to ensure even drying.
Bochesa's commitment extends beyond quality—they provide seedlings to the local community and offer financial support to farmers, while planning future expansions including solar tunnels and underground water sources.
In the cup this exceptional coffee reveals a delicate harmony of peach and lychee sweetness, brightened by citrus notes and crowned with elegant floral aromatics reminiscent of orange blossom.
Minimum resting period: 10 days from the roast date for espresso, 8 days for filter roast.
