In the misty mountains of Yunnan Province, China's coffee heartland, Aulai Washing Station stands as a beacon of innovation. Nestled at elevations of 1400-1600 meters, the fertile volcanic soils and distinctive climate—warm days giving way to cool nights—create perfect conditions for slow-ripening coffee cherries rich in complex sugars.
This exceptional coffee is part an experimental program under the guidance of expert Q-grade mentors. Since establishing in 2015, the team has dedicated themselves to elevating Yunnan coffee through innovative processing methods and community education.
What makes this coffee truly remarkable is its pioneering co-fermentation process. Juniper berries—the botanical behind gin's signature flavor—are mixed with water and fermented to precise Brix and pH measurements. This aromatic solution is then added to coffee cherries for an extended anaerobic fermentation (without oxygen), where it imparts its distinctive character before careful drying.
The result of this meticulous process is a truly unique sensory experience. The anaerobic environment slows fermentation, allowing complex flavors to develop while the juniper infusion creates an unmistakable botanical signature.
In the cup, this Catimor varietal reveals layers of cocoa nibs and tropical fruits dancing with black grape sweetness. The crisp finish carries a distinctive gin-like complexity—botanical (rosemary and juniper), bright, and refreshingly different from anything you've experienced before.
Resting period: at least 10 days for filter roast.
