Perched high in Colombia's Antioquia mountains, Finca La Reserva tells a story of transformation and vision. When Juan Felipe Ocampo discovered this abandoned farm in 2018, he saw beyond the neglect to the extraordinary potential in its fertile soils and ideal elevation of 1800-2700 meters.
With unwavering determination, Juan Felipe has revitalized La Reserva, creating a sanctuary where exceptional coffee and nature thrive in harmony. Today, while cultivating over 20 different specialty varieties, he proudly protects 200 acres of natural reserve, providing a haven for countless native species, including endangered Andean bears.
This remarkable Chiroso showcases why this rare variety is considered Colombia's answer to Geisha. Known for its elongated beans and distinctive profile, Chiroso delivers a delicate complexity that flourishes in Antioquia's high-altitude climate.
Juan Felipe's innovative anaerobic honey process enhances the coffee's natural characteristics through a meticulous two-stage fermentation: 36 hours in cherry followed by 96 hours after pulping in sealed, oxygen-free containers, before being dried for approximately 8 days. This controlled environment creates a unique alchemy, intensifying the bean's inherent qualities while developing new flavor dimensions.

In the cup: experience a delicate and juicy coffee with yellow fruits, rhubarb and citrus brightness beautifully balanced by honey sweetness and white flowers. Each sip reflects both the exceptional terroir of La Reserva and Juan Felipe's dedication to his craft.
V60 recipe: we recommend a rather quick extraction time, with a grind slightly coarser than the usual medium-fine.
Minimum resting period: 8 days for filter roast.
