Producer
Aristóbulo Rayo Méndez represents a legacy of coffee farming, managing Finca La Victoria for 50 years. His 47-hectare farm dedicates 8 hectares to coffee cultivation and preserves 10 hectares of natural forest. As a member of Cafe Agrario, a cooperative of 35 small producers, he's transitioning from commercial to specialty coffee production.

Process
Meticulous harvest and processing define this coffee's quality. Cherries are selectively picked every 20 days, with pickers receiving a premium for selecting only ripe fruit. After harvesting, cherries are pulped and fermented for 24 hours in tiled tanks. The beans are then thoroughly washed three times and carefully dried on African raised beds, ensuring optimal flavor development.
