Process
The anaerobic honey process represents a meticulous approach to coffee fermentation. By carefully controlling oxygen exposure during two distinct fermentation stages—first with the cherry, then after pulping—Juan Felipe creates an environment that intensifies the coffee's inherent characteristics while developing remarkable new flavor dimensions.
