Producer
Hacienda La Palmera, founded in 1969 by Don Octavio Rodriguez, is now managed by his son Ignacio. The farm provides stable employment for 48 women, many single mothers, who play crucial roles in quality control. Ignacio is committed to sustainable practices, reducing chemical fertilizers and investing in advanced processing technologies.

Process
Using innovative bioreactor technology, this coffee undergoes a unique 180-hour CO2 fermentation process. By injecting carbon dioxide and creating a low-oxygen environment, different microorganisms are activated, generating a distinctive flavor profile.
