Using innovative bioreactor technology, this coffee undergoes a unique 180-hour CO2 fermentation process. By injecting carbon dioxide and creating a low-oxygen environment, different microorganisms are activated, generating a distinctive flavor profile. Cherries are carefully hand-selected and processed with meticulous attention to detail.
