Over 74 harvests, they've transformed Fazenda das Almas through continuous innovation, obtaining prestigious certifications like UTZ, BSCA, and RAS. Process
This lot undergoes a sophisticated anaerobic fermentation process. Ripe cherries are carefully hand-picked, with less than 5% green fruit inclusion. After density separation, the cherries are sealed in hermetic containers, fermenting for 69 hours. An airlock device manages gas release, while temperature and environmental conditions are meticulously controlled throughout the process.
