About the Coffee

Origin
Yunnan Province represents China's emerging specialty coffee frontier, characterized by volcanic soils and a unique microclimate. The region's high-altitude terroir—ranging between 1400-1600 meters—creates ideal conditions for slow-ripening coffee cherries, allowing complex sugars to develop and contributing to the coffee's distinctive flavor profile.

Process
This coffee undergoes a pioneering co-fermentation process where juniper berries are meticulously fermented and integrated with coffee cherries. The carefully controlled anaerobic environment—maintained at precise Brix and pH levels—allows for extended fermentation, enabling deep flavor development and the infusion of unique botanical characteristics.

The gin-like complexity introduces botanical hints of rosemary and juniper, delivering a crisp, refreshingly unique flavor experience. Resting period: at least 10 days for filter roast.
