A rare opportunity to taste a limited availability nanolot that marks more than 91 points: welcome the Sudan Rume Natural from Café Granja La Esperanza, presumably the most famous Colombian producer of ultra-specialty microlots.
In the cup are recognizable aromas of tropical fruit, like pineapple; the tasting notes are of honey, winey, red fruits, jasmine, with a silky body and a persistent aftertaste of dark chocolate.
First discovered in 1942 on the Boma plateau, Sudan Rume is a wild variety from the forests of the intertropical zone of Africa, southeast of the Republic of Sudan. Before bringing this varietal to Colombia, Granja La Esperanza carried out numerous tests on the soil, obtaining the best results at their Las Margaritas farm, at an altitude between 1700 and 1800m above sea level.
Cherries are strictly hand-picked and immediately fermented for 36 hours into special steel tanks without the addition of water. The containers are closed but not hermetically sealed; hence the air allows for a faster fermentation of the cherries. The temperature is kept constant at 30 ° C.
The cherries are then moved to a mechanical dryer, where they are dried for 48 hours. The temperature is kept constant at 40 °C for 48 hours.
Finally, the Sudan beans are placed on raised beds under the sunlight, where they spend another 15 days until the desired residual humidity level is reached.
The beans, after the removal of the parchment, are vacuum packed in 5kg bags.
