Sitio Vital Coffee, in Sul De Minas, is named after the Vital family, translated the name means “the vital coffee place”. It is one of the smaller farms in Brazil, as typically, farms are vast and mechanized.
Danilo Vital was born in the surrounding area and learned about producing coffee at a young age. It was his grandmother, Nita, who initially taught him. Nita showed Danilo how to grow the plants and the importance of natural fertilizer and all the way through to post-harvest preparation of coffee.
Now his farm is a family affair, as he works alongside his parents to produce the coffee.
They normally produce 30 bags per year in total, focusing on producing high-quality coffee.
All the picking at Sitio Vital Coffee is done by hand, only when the cherries are evenly ripe, and then hand sorted for over and under-ripe ones.
The cherries are processed as natural coffee, and the whole cherry is slowly dried under the sun on the patio. Usually, this process gives you the perception of a sweeter coffee. This is because, through fermentation, microbes create compounds called “esters” that are absorbed by the seed. These esters survive the roasting process and are precursors to aromas that are created in the caramelization process of roasting, and this makes the coffee seem sweeter.
We chose this lot because of its tasting notes: you’ll find great sweetness, sweet like sugarcane juice.
In the cup: notes of molasses, milk chocolate, and stone fruits. Vanilla cake finish. Smooth creamy mouthfeel and good structure.
We find them perfect for a classic sweet & creamy espresso everybody would love!
