Sítio da Torre (which means “Site of the Tower”) is an award-winning farm, well known for the uncompromised quality of their coffees. It is located in Carmo de Minas, Mantiqueira de Minas region, in the Brazilian state of Minas Gerais.
Alvaro Antônio Pereira Coli, owner and a fourth-generation farmer, has focused on the quality of the product obtaining exceptional results: his lots have won the Brazilian Cup of Excellence six times over the last eight years.
The plantation is situated at an altitude of 1100 - 1300m asl and covers 65 hectares, of which only 35 are cultivated with coffee. The varieties include Bourbon, Acaia, Catuaí, and Catucaí.
This particular microlot is composed of Yellow Barbon only, worked according to a natural process and kept separate from the other lots to enhance the distinctive characteristics of this varietal.
The cherries, picked strictly by hand only when perfectly ripe, are dried in thin layers over raised beds, where they are turned at least twenty times a day to ensure they dry out homogeneously without unwanted fermentation until the residual humidity reaches a target value around 11.5%. After the mechanical removal of dried skin and mucilage, as well as parchment, the beans are carefully packaged into GrainPro sealed bags, further protected by traditional jute bags.
In the cup, extracted as espresso, this specialty coffee exhibits notes of milk chocolate, vanilla, orange zest, and blueberry, providing an intense and delicious cup, typical of the best Brazilian coffees only.
