Carlos Alfredo Estevez is a second-generation coffee farmer based in Corquin, Copan area of Honduras.

Carlos’s parents cultivated various different crops throughout their lives, from sugar cane to tobacco, riding waves of price fluctuations until they finally settled on coffee cultivation, which for their generation was quite profitable.

He is a trained agronomist and began his career as a consultant for several farmers, teaching them in farm management and in particular by spreading the approach to obtaining specialty coffee. In this way, he was able to know all about coffee cultivation and processing. From plant nutrition to innovative fermentation and drying methods, Carlos experienced all the processes to get the most out of the coffees.

Carlos, therefore, decided to apply this experience to his own plantation. He chose one of the highest plots of the area, at 1500 m asl up, and planted several varieties, including Lempira, Parainema and IHCAFE 90. The latter is a Catimor, i.e., a cross between the Hybrid of Timor and Caturra, and was obtained at the beginning of the 90s by the Instituto Hondureño del Café (IHCAFE) _. Nero Scuro’s microlot is entirely composed of this varietal.

This microlot was prepared through extensive fermentation (maceration) for 72 hours before being dried on raised beds for about 40 days. Carlos decided to macerate this lot to take the body to the next level, while still keeping a remarkable sweetness and pleasant acidity.

In the cup, the coffee produces notes of milk chocolate, strawberry milkshake, winey in a very creamy body.
