This microlot comes from a small, recently established farm named Hacienda Filo Alto. The farm, of only 5 hectares, is owned by Jonathan San Juan, a young farmer from Pitalito, in the department of Huila, Colombia. This department is well-known for the absolute quality of the Arabicas it produces.
On the farm, located at 1700m asl, the Caturra and Colombia varieties are grown. Coffee processing is carried out under the supervision of Juan Fernando Saldarriaga, owner of Hacienda La Claudina, of whom we offered year after year several micro-lots, due to their outstanding quality. Juan makes his knowledge of coffee cultivation, processing, and distribution available to other farmers.
This microlot was prepared following the traditional fully washed process of Colombian coffees. After harvesting, strictly done by hand to select only the ripest cherries, these are immersed into tanks, where the defective, less dense ones are identified and removed.
The fermentation, which lasts 24 hours, is carried out in freshwater, using fermentation tanks, where the cherries are stored. At the end of fermentation, the parchment is washed in clean water and then placed on raised beds to dry out and reduce the residual moisture to the desired value (10–12%). Finally, the parchment is removed mechanically, and the green beans are packed in 30kg GrainPro bags.
In the cup, this specialty coffee is very sweet and pleasant with notes of honey, pear, and berries. The finish presents a subtle spicy hint. The body is full. We have developed a roasting profile dedicated to espresso and moka extraction, for which coffee is very suitable!
