The Delgado brothers - Magali and Alexander - run the Cerro San Luis micro-mill in the Alajuela province of Costa Rica’s Western Valley. Along with their families, they are the third generation of coffee growers.
Their micro-mill processes the cherries from their two farms, Finca La Amada and Finca el Venado. There, the fertile volcanic soils of the West Valley produce an excellent cup profile and a perfect separation of the lots by variety, picking day, and process ensures the total traceability of the lots.
The specialty micro-lot roasted by Nero Scuro is composed of Villa Sarchi varietal only and comes from Finca La Amada. The hand-picked cherries have been processed as “yellow honey”.
After the hand-picked cherries have been delivered to the mill, the outer skin and most of the mucilage are removed mechanically from the parchment. The latter, with the residual mucilage still attached, is then sun-dried until a residual moisture of 12% is reached.
The lighter fermentation typical of this process favors the formation of hibiscus, red grape, and rose light notes, well perceived in the cup. This specialty coffee is sweet and sugary and comes roasted to order with specific profiles for espresso or filter extractions.
