This is the second specialty microlot we feature this year from the farms of Salaverria family, growing coffee from five generations in El Salvador. They manage a few farms that work exclusively with high-quality specialty coffee micro-lots in the Volcan de Santa Ana area.
Finca Guadalupe is managed by Jose Antonio Salaverria. This farm is a special place for him, as it was the first he managed and where he learned the coffee cultivation basics back in days. At the Guadalupe, Bourbon, Catuai, and Pacas varietals are grown at an altitude of 1450 masl.
The microlot was prepared according to the natural process: strictly hand-picked when perfectly ripe only, the cherries were dried on raised beds. The favourable meteorological conditions, such as a dry and never-too-hot climate, slow down the drying phase and allows for superior control of the fermentation. This leads to cup profiles that are extremely clean and complex.
Full of funky notes of vanilla, peach, and other ripe fruits, this specialty coffee is syrupy and winey with compelling intensity and vibrant sensations on the palate.
