Coming from Fazenda Sao Sebastiao, this specialty microlot represents what a fantastic Brazilian specialty espresso coffee looks like: in the cup, the sweet notes are of hazelnut, milk chocolate, shortbread, caramel. The body is full, and the result is extremely well balanced.
The story of Sao Sebastiao and its founder, Jung Han Kim, is unique. He was not born in the world of coffee and is not even native to Brazil. Jung immigrated from South Korea in 1964. When his country was recovering from the war, and opportunities were therefore limited, Brazil offered way better opportunities.
Jung settled in São Paulo, where he got married and had five daughters. He established a successful clothing manufacturing business with his family, but his dream was always to own a coffee plantation.
In 2012, at the age of 71, Jung bought a farm, Sao Sebastiao, initially with 80 hectares of coffee. Today the hectares are 342, and the employees of the farm are about 500.
The plantation is now managed by Catarina Kim, Jung's daughter, who joined him at the farm and helped him run the company. Marcus, Catarina's husband, runs the plantation with a particular focus on specialty coffee production.
Marcus was involved in the experimentation of the different processes of preparation of specialty coffee: washed, natural with varying levels of fermentation, fermentation at controlled temperatures, up to anaerobic ones.
